Barbecue season

Lockdown and great weather has seen us all getting out the barbecues and getting grilling.







Here at H&D we've done a few different barbecue shoots for clients - and some for ourselves. Our own barbecues tend to be working ones where we discuss our business and so are simple affairs - we throw on sausages, burgers, corn cobs, asparagus and anything that cooks easily on the grill.


But we do have a secret sauce we brush on everything from bangers to chicken and even our veg.


Here's the recipe...

1 small onion or shallot, chopped

2 cloves of garlic, crushed

Oil (preferably olive)

I chilli, finely chopped

1/2 cup brown sugar

1/2 cup light soy sauce

4 tbsp tomato ketchup

Squeeze of honey

Fry the onion and garlic in olive oil with the chilli until soft. Add the sugar and stir for a few minutes to dissolve. Add the soy sauce and ketchup and season with salt and pepper. Bring to the boil and simmer for a few minutes. It's now ready to brush over whatever you like! Serve any extra on the side. This will also keep for a couple of days in a jar in the fridge.
